There is a reason why Palatine liver sausage from Cornelius tastes so good. Cornelius manufactures in the traditional production plant of a committed family business. Using handed-down recipes in small high-quality batches, in careful coordination while concentrating on freshness and taste:
- Fresh pork is minced and boiled.
- It is mixed with freshly minced pork liver and grated onions and seasoned using our traditional spice recipes.
- Then the sausage mix is filled into natural or artificial casing and boiled again for one hour.
- Finally, the smoked varieties are carefully smoked to tasty perfection.

The special flavor of our Palatine liver sausage and our Palatine delicacies have made the name Cornelius famous. Naturally, all recipes are carefully kept family and company secrets, but we can reveal the following: in addition to the usual seasonings nutmeg, pepper, and marjoram we use cardamom, lovage and coriander … the exact mixture is the secret! And: our Palatine liver sausage is manufactured using a traditional lactose- and preservative-free recipe.

The production of our Palatine liver sausage and Palatine delicacies is based on the experience of three generations and the continuous development in gentle and high-quality processing methods. Most important in the production plant in Hockenheim — then as now — are quality, traditional manufacture, and fresh ingredients. Every delivery is carefully examined, checked, and documented — before it is approved for direct further processing. The fresher the ingredients, the better the quality. That also goes for the other ingredients such as fresh onions, herbs, and spices.
